The Art of Omakase

Omakase is a traditional Japanese dining experience where guests entrust the chef to select and prepare each course. At Sushi Shin, we honor this centuries-old tradition with the finest seasonal ingredients, sourced daily from Toyosu Market.

Omakase concept
01

Seasonality

Shun — the peak moment of flavor. We follow nature's rhythm, serving each ingredient at its absolute best.

02

Technique

Years of discipline in every slice. Temperature, pressure, timing — nothing is left to chance.

03

Presence

Twelve guests. One chef. Intimate, intentional, and entirely focused on the moment.

The Chef

Kenji Nakamura
Master Sushi Chef

Kenji Nakamura

Trained for 15 years under Master Jiro Ono in Tokyo, Chef Nakamura brings a lifetime of dedication to the counter. His philosophy is simple: respect the ingredient, master the technique, and serve with intention. Each piece of sushi is a conversation between the chef and the guest.

"Sushi is not just food. It is a moment of connection between the ocean, the rice, the chef, and you."
